I made this chocolate ganache finished cake for a styled shoot at Chafford Park. I collaborated with Evie from The Country Blush, Emma Hall photography and lots of other talented local suppliers to create some great inspiration for wedding styling.

I went bold with this 3.5 tier green cake with rice paper sails and gold leaves, I love how versatile white chocolate is as a medium and how bright it can be coloured.

Stanmer House When I was invited to make a black

Stanmer House

When I was invited to make a black and white wedding cake for a styled shoot at Stanmer House I just knew I had to keep it simple, elegant and romantic.

I hand dyed the silk ribbon black and paired it with a white fondant iced cake with a step tier in black on the base, the plinth is now available to hire as part of a cake styling package I provide and I also dyed the cheesecloth runner in grey. The shoot was a joy to work on, I absolutely adore these opportunities to get creative in the winter months.

With some styled shoots coming up over the next weeks which give me space for some creative freedom I am reminded of this gorgeous lavender haze shoot last year at The George In Rye. I’m lucky enough to have quite a few weddings here coming up, it really is a gorgeous venue in the heart of the town. Every time I visit to deliver a cake I long to stay sometime.

I’ve been a bit quiet recently on social media but behind the scenes have been busy talking to lots of couples about their 2024 wedding cakes and taking bookings for 2024/2025. I really enjoy the contrast of an on and off season when working in the wedding industry as the off season gives me a chance to recuperate, creatively and mentally and prepare for the season ahead like a little squirrel stashing nuts away except I’m stashing wedding cake sketches 😆

I’ve got some lovely designs coming up this year, lots include pressed flower cakes which I adore making so not only am I planning the cake designs but gathering seeds ready to sow in my poly tunnel to grow beautiful edible flowers which I will press for cakes.

Is anyone else out there enjoy taking it slow in the winter months?

Mix tradition with a pinch of theatre and a healthy dose of fun. The iconic cake cutting moment is one to be cherished and enjoyed. I also recommend tasting some of the cake as you cut it, looks really fun in photos. Finally, don’t be scared to move the cake for the cake cutting moment if it works better. Josie and Josh also then used the cake as dessert, even better!

My lovely couple L&T asked me to create them a pastel Spring themed edible pressed wedding cake for their celebration at Firle Place this April. The cake was finished with fresh flowers supplied by @gobotanica.
